IMG_1236.jpg

Kapha dosha is increased in winter and the recommendation in managing this is to avoid anything overly sweet, heavy, sticky, oily… which rules out a lot of desserts! Here is a slightly sweet, spiced, warm and crumby dessert that you can happily indulge in this winter.

Ingredients:

  • 5 cups fruit:  apples, blueberries, raspberries, pears

  • 2 cups apple juice

  • ¼ cup raisins

  • 1 teaspoon cinnamon

  • ¾ teaspoon coriander powder

  • ⅛–¼ teaspoon dry ginger powder

  • 1 tablespoon lemon juice

  • 2–4 tablespoons honey (optional)

  • For Topping: 1 -2 cups granola mixed with 2 tablespoon shredded unsweetened coconut.

Method:

  • Wash fruit.

  • Chop apples and pears into 1-inch pieces.

  • Pour apple juice into medium-sized saucepan and heat on medium.

  • Put chopped apple and raisins, and cinnamon in saucepan, cook over medium heat for 15 minutes.

  • In the last 5 minutes add pears and berries.

  • Remove from heat. Add coriander, ginger, lemon juice, and honey and gently stir.

  • Spoon into serving dish with a layer of granola mix at the top and base (heavier on the base). Serve hot.
