Healing & Hearty Spiced Vegetable Soup
This soup is a great alternative to Kitchari when you are in a period of cleansing or fasting, or as a warming lunch or dinner with a piece of toast on a cold day..
Ingredients:
2 cups of vegetables of choice, prepped and chopped
3 tbsp sliced onions
1 tbsp ghee
1tsp each cumin, coriander, fennel seeds
½ tsp each cumin and coriander powder
1tsp turmeric powder
1 cup pre-boiled rice
3-4 cups of water
Salt and pepper to taste
2 tsp black peppercorns
Fresh coriander leaves and stalk, chopped
Method:
Place vegetables in a saucepan with water. Add salt and pepper corns to taste, and boil until semi-soft.
Remove from stove and gently mash vegetables with a potato masher, leaving it slightly chunky. There should also still be water in the saucepan to make the ‘soup’
Separately, cook sliced onions in ghee until translucent and add whole spices (cumin, coriander, fennel seeds) to this mix.
After whole spices are heated, add powdered spices and stir to combine.
Stir in this spice mixture to veg soup and bring to the boil again before removing from heat.
Add about 1 cup of pre-boiled rice in at end and garnish with fresh coriander to serve.
Make 4-5 serves.
