Cooling Coconut & Rose Chia Pudding
A soothing, hydrating and pitta balancing summer nourishment
This gentle pudding is a beautiful cooling dish for warm days when the body needs light yet sustaining nourishment. In Ayurveda, coconut and rose are both deeply calming and cooling to the system, helping to soften internal heat, soothe digestion and settle the mind.
Chia seeds provide grounding and hydration, while cardamom supports gentle digestion and prevents heaviness. The result is a delicately sweet, floral and refreshing bowl that nourishes both body and senses.
Perfect as a light breakfast, mid-afternoon reset, or calming evening treat.
Ingredients (Serves 2)
2 cups coconut milk (full fat for nourishment)
6 tbsp chia seeds
1 tsp rosewater (food grade
½ tsp ground cardamom
1–2 tsp maple syrup or raw honey (optional, to taste)
Pinch of natural salt
Toppings (optional):
Fresh pomegranate
Coconut flakes
Rose petals (edible)
Seasonal berries
Method
In a bowl or jar, whisk coconut milk, rosewater, cardamom, sweetener and salt.
Stir in chia seeds and mix thoroughly to prevent clumping.
Let sit for 5 minutes, then stir again.
Cover and refrigerate for at least 3–4 hours or overnight until thickened.
Serve chilled with fresh, cooling toppings.
