Warming Spiced Lentil & Vegetable Stew
A grounding autumn recipe to support digestion and nourishment.
As we move deeper into autumn, warm, cooked meals become increasingly important in supporting digestion and maintaining balance.
This simple lentil and vegetable stew is nourishing, easy to digest, and gently spiced to support agni (digestive fire) without overwhelming the system. It is ideal for cooler evenings or as a grounding midday meal.
Ingredients
1 cup red lentils (rinsed)
1 carrot, chopped
1 zucchini, chopped
1 small sweet potato, diced
1 teaspoon cumin
1 teaspoon turmeric
½ teaspoon ginger (fresh or powdered)
1 tablespoon ghee or olive oil
4 cups water or vegetable broth
Pinch of salt
Method
1. Rinse lentils thoroughly until water runs clear.
2. In a pot, gently warm the ghee and add spices, allowing them to release their aroma.
3. Add chopped vegetables and stir lightly.
4. Add lentils and liquid, bringing to a gentle boil.
5. Reduce heat and simmer for 20–25 minutes until soft and well combined.
6. Season to taste and serve warm.
