2 medium carrots, washed and shredded
2 tablespoons golden raisins
1/8 inch piece fresh ginger, grated
Juice of half a lemon
1/16 tsp salt
1/2 tsp turmeric
1/2 tsp cinnamon
1/4 tsp cardamom
1/8 tsp black pepper
1/8 tsp ground cloves
1/4 tsp raw sugar (optional)
Method:
Toss the shredded carrots, raisins, and ginger with the lemon juice and salt.
Mix the spices and sugar together, then gently fold them into the salad.
